The sun is finally out here in the UK and brings the promise of warmer days, the touch of sunshine on your skin and a chance to live your best soakin’ up the sun life. 

Even if this year all of that has to be put on hold and the reality is more like us staring out the window and remembering the days when you used to be able to do things like go for long country walks and head to the beach, spring is bringing its own vibe.

Just so happens that vibe goes down easily with one of these refreshing strawberry and mint vodka cocktails. 

Making cocktails at home has been one of the elements of pure joy for me.

Even as the world seemingly falls down around our ears, there’s something to be said for putting together a few fresh ingredients, shaking, muddling and working them into something boozy and good.

Practical Tips for Making a Strawberry and Mint Cooler 

Use Fresh Strawberries 

I’d recommend using fresh strawberry juice to make this cocktail – simply blitz up / muddle some strawberries then strain through muslin or a fine sieve to get rid of the pulp and seeds before you start making the cocktail. 

Make Your Simple Syrup Before You Start 

I’ve already talked about how to make sugar syrup in my Pink Grapefruit & Gin Cocktail but, if you need a little refresher you just warm equal parts water and sugar on a low heat until the sugar dissolves.

Make sure you keep the heat low so it doesn’t brown or burn.

Strawberry Vodka Cocktail Recipe

Prep Time: 5 minutes
Total Time: 5 minutes

This delicious strawberry, mint and vodka cocktail is perfectly so easy and tastes like summer in a glass. A total breeze to make at home.

Ingredients

  • 50ml fresh strawberry juice
  • 50ml vodka
  • 15ml lemon juice
  • 12.5ml simple syrup
  • 1 large sprig of mint, leaves picked, plus extra for garnish

Instructions

  1. Half fill a cocktail shaker with ice. Pour in all of the ingredients.
  2. Shake well.
  3. Half fill a short glass with ice and strain the shaken cocktail into it, garnish with the mint and enjoy.
